Autumn Cooking: Amazing Pumpkin Muffins

So I used this pumpkin bread recipe [] as the template for my homemade pumpkin muffins. The modifications I made are below. These muffins were moist, tasty and healthy! I hope you enjoy! And if you make any other changes let me know.

  • I roasted a small pie pumpkin, scraped the yummy insides out and made into a puree using my food processor [this is a little bit of work, but well worth it]
  • I used 1/2 cup of unbleached white flour, 3/4 cup whole wheat flour and 1/4 cup of flaxseed meal
  • Reduced sugar to 3/4 cup
  • Reduced oil to 1/3 cup and used grape-seed oil

It made 12 medium sized muffins.

"These muffins were moist, tasty and healthy!"
I baked at 375 degrees for approximately 15 minutes. Before putting in the oven, I sprinkled half the muffins with a little bit of sugar and put walnuts on top of the other half.
