Moist Mulberry Muffins

Mmm mmm delicious mulberries. The mulberry is a hardy little berry that grows on a tree. You can eat them by the handfuls or make these wonderfully moist and healthy mulberry muffins. We eat them for breakfast or a mid-day snack. Not much more to say because these muffins speak for themselves!

Ingredient List: 

1.5 cups mulberries rinsed and dried
2 1/4 cup unbleached all-purpose flour
1 tsp vanilla
2 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tbsp wheat germ
1 cup organic whole milk or organic butter milk
1/2-3/4 cup white sugar (amount depends on tartness or sweetness of your berries)
2 eggs


Preheat oven to 400 degrees. In a mixing bowl mix the eggs, sugar and vanilla. In a small bowl combine all the dry ingredients. then slowly add the dry ingredients and milk into the egg and sugar mixture (alternating them: little dry mixture, little milk, stir and repeat). Once mixed, fold in the mulberries. In a 12 count cupcake pan (greased or with liners), pour or spoon in the batter, filling them all the way to the top. This will make nicely shaped muffins. Bake for 12 to 15 minutes or until golden brown. Remove from oven and promptly remove muffins from pan onto cooling rack to avoid them from continuing to cook (and over-cook). Let cool for 5 to 10 minutes and enjoy with milk, tea or coffee.
