Sun-dried Tomato and Olive Egg Casserole

I love to make egg casseroles because they are so versatile. You can make the ahead time. You can eat them for breakfast, lunch, brunch or dinner. I could go on and on about their versatility. And every so often I make an egg casserole that is just extra yummy, which is the case with this particular recipe. It just turned out wonderfully scrumptious. The sweetness of the sun-dried tomatoes, the saltiness of the green olives and the tanginess of the sharp cheddar cheese all in the perfect canvas of custardy eggs and crusty potatoes. This is a recipe you cannot pass up.

Simply Homemade Almond Granola

I love granola, but was tired of buying granola and granola bars that were expensive and lacking the taste I really desired. I also wanted my granola to be fresh and without all those added fillers. Well, after years of making and playing around with the recipe, this home-made granola is awesome! It goes well with yogurt, milk or just all by itself. Although I call this almond granola, if you use your imagination in the kitchen you could use any nut, dried fruit or extract to make this granola your own. Let the yumminess begin!

Nutty Thai Sauce with Veggies and Noodles

This is an easy and yummy recipe that I make about once a mouth. The sauce is nutty, spicy, creamy and salty. I love it! And it compliments a variety of different noodles and vegetables. Although my favorite veggies with this dish are baby corn, snow peas, water chestnuts, broccoli, sweet bell peppers, carrots and mushrooms. You can add meat if you want, but it is really not necessary between the peanut sauce and mushrooms. This makes a great Meatless Monday dinner; or you could make it any day of the week like me.

Sunday Sweet Cinnamon Rolls

I, like many of you, try to eat as healthy as possible. However, I feel that on occasion it is okay to indulge a little. Well, these cinnamon rolls are amazing and just the type of baked good you would want to indulge in occasionally (for example, Easter Sunday). They are moist, sweet, and light. Oh, and the best part is, it is a relatively easy recipe - at least for one that involves baking with yeast. I enjoy them with a good cup of coffee and soft boiled egg. You could, however, easily eat these by themselves for breakfast if you wanted.

Sweet and Spicy Muffins

Muffins are such a versatile food. They can be sweet and savory. They can be eaten with breakfast, lunch, or dinner. And they make wonderful snacks and desserts. This muffin I have eaten as a snack, with breakfast and as my dessert. One of these muffins warmed up and eaten with a cup of tea or coffee is just a wonderful little treat; and one I do not feel guilty about. These muffins freeze well, too. I dare you to bake and try these Sweet and Spicy Muffins.

Homemade Artisan Bread Made Simple and Inexpensive

If you are like me, baking with yeast is almost always a guaranteed disaster. The bread is either too dense or too doughy. It often does not rise properly, which is frustrating when you wait hours for it to rise. And who wants to eat flavorless bread that you slave away making from scratch? So, I have a solution. Now this is not sandwich bread, but it is an amazingly delicious bread you can eat with soups, cheeses or dip in extra virgin olive oil. Oh, and it is amazing with a good glass of wine.

Chewy Healthier Oatmeal Cookie

Oatmeal cookie recipes can be hit or miss. At least that is what I have found throughout the years of making them. They are either too dry, too crispy or flavorless. Well, this oatmeal cookie has less sugar than most oatmeal cookies, has wonderful flavor and is crispy around the edges and chewy in the middle. This is an award winning cookie recipe in my own personal recipe book.

Blueberry Delicious Muffins, Gluten Free

Like many out there, I am trying to lower, or eliminate, gluten from my diet. I love to bake muffins to have with my breakfast or as mid-day snack. Uber Cheesy Rice & Cauliflower Casserole

This is a recipe that I put together to satisfy the ultimate cheese lover. It has a wonderful cheesy flavor that is smooth and creamy. The ham is optional, but adds a slight smokiness to the dish that I believe enhances the cheesy flavor. The rice and cauliflower are the perfect canvas for all this cheesy goodness, making this dish very filling and satisfying.
